We are Pit Smoking Turkeys for Christmas. They are slow smoked with split Post Oak.
We have a new item in the deli case! Pit Smoked Pork Loin – we have it whole and sliced thick or thin.

We have just finished our first test batch of hand rubbed smoked bacon. We will let you know when we have some of this delicious meaty goodness for sale at the meat market. We hope to have thick sliced, peppered and maple flavored!

We had fun this week rebuilding our first stuffer we ever owned way back in the sixties. It was a water stuffer that uses water’s hydraulic action to stuff the formulation into casing. It’s a lot different than the modern stuffer we use now.

I had the pleasure of visiting with a customer who use to own and operate Ray’s Barbeque (Ray Wendland) back in 1965. His restaurant was located at Braker lane and IH I-35. He remembered that he had tons of university professors bringing their fellow professors and students out to eat our sausage – they loved them. His customers loved the regular, hotlinks and jalapeno.
